Ingredients

  • 2 tablespoons olive oil
  • 6 cloves garlic cloves, minced
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery stalks, diced
  • 2 cans (15 ounces each) cannellini beans (white beans), rinsed and drained
  • 4 cups vegetable or chicken broth
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 cups baby spinach (optional)
  • 0.25 cups parmesan cheese, grated (optional for garnish)
  • 1 loaf crusty bread (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the minced garlic, diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are tender and the onions are translucent.

Step 3

Stir in the cannellini beans, vegetable or chicken broth, rosemary, and thyme. Bring the mixture to a boil.

Step 4

Reduce the heat to low, cover the pot, and let the soup simmer for 20 minutes, allowing the flavors to meld.

Step 5

Use an immersion blender to partially blend the soup to your desired consistency—it should be creamy but still have some chunks of beans and vegetables for texture. Alternatively, transfer half the soup to a blender, blend until smooth, and then return it to the pot.

Step 6

Season with salt and black pepper to taste.

Step 7

If using baby spinach, stir it into the soup during the last 2-3 minutes of cooking until wilted.

Step 8

Ladle the soup into bowls and garnish with grated parmesan cheese if desired. Serve with crusty bread on the side.
