Directions

Step 1

Preheat your oven to 375°F (190°C) and butter a 9x13-inch baking dish.

In a large skillet over medium heat, cook the diced pancetta until crisp, about 5 minutes. Remove with a slotted spoon and set aside.

In the same skillet, add the baby spinach and cook until wilted, about 2-3 minutes. Remove from the heat and set aside.
