Ingredients

  • 4 pieces Italian sausage links (mild or spicy)
  • 2 tablespoons Extra-virgin olive oil
  • 1 large Red bell pepper, sliced into thin strips
  • 1 large Green bell pepper, sliced into thin strips
  • 1 large Yellow bell pepper, sliced into thin strips
  • 1 piece Large onion, halved and sliced thinly
  • 4 cloves Garlic cloves, minced
  • 1 14.5-ounce can Canned diced tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Red pepper flakes (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 4 pieces Crusty sandwich rolls (optional, for serving)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the Italian sausage links to the skillet. Cook for 4-5 minutes per side, or until browned evenly. Remove sausages from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced red, green, and yellow bell peppers, along with the onion. Cook for 8-10 minutes, stirring occasionally, until the peppers and onions are softened and beginning to caramelize.

Add the minced garlic to the skillet and cook for 1 minute, until fragrant.

Slice the browned sausage links into 2-inch pieces and return them to the skillet with the pepper and tomato mixture.
