Ingredients

  • 1 cup All-purpose flour
  • 1 cup Grated Pecorino Romano cheese
  • 6 tablespoons Unsalted butter, cold and cubed
  • 3 tablespoons Water, ice cold
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 teaspoon Fresh rosemary leaves, finely chopped (optional)
  • 1 teaspoon Flaky sea salt, for sprinkling

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a food processor, combine the all-purpose flour, grated Pecorino Romano, salt, and ground black pepper. Pulse a few times to blend the dry ingredients evenly.

Step 3

Add the cold, cubed butter into the food processor and pulse until the mixture resembles coarse crumbs.

Step 4

While pulsing, slowly add the ice-cold water, 1 tablespoon at a time, until the dough just comes together. Be careful not to overmix.

Step 5

If using rosemary, stir in the finely chopped rosemary leaves for an added herbal flavor.

Turn the dough out onto a lightly floured surface and gather it into a ball. Flatten the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 10 minutes.
