Ingredients

  • 10 pieces Organic lemons
  • 1.75 liters Vodka (preferably 80-100 proof)
  • 3.5 cups Granulated sugar
  • 2.5 cups Water

Directions

Step 1

Carefully wash and dry the lemons to remove any dirt or wax. Use a vegetable peeler to remove the zest from each lemon, avoiding the bitter white pith underneath.

Place the lemon zest in a large glass jar or container with an airtight lid. Pour the vodka over the zest, ensuring all the zest is submerged.

Seal the container and store it in a cool, dark place for at least 7 days, preferably up to 2 weeks. Shake the container gently once a day to infuse the flavors.

After the infusion period, prepare a simple syrup. In a saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar is completely dissolved. Remove from heat and allow the syrup to cool to room temperature.

Strain the vodka mixture through a fine mesh sieve or cheesecloth into a large bowl, discarding the lemon zest.
