Ingredients

  • 12 sheets Lasagna noodles
  • 15 oz Ricotta cheese
  • 2 cups Mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 10 oz Frozen spinach, thawed and squeezed dry
  • 1 large Egg
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Nutmeg
  • 4 cups Marinara sauce
  • 1 tbsp Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil.

Step 2

Cook the lasagna noodles in a large pot of salted boiling water according to package instructions until al dente. Drain and lay the noodles flat on a sheet of parchment paper to prevent sticking.

Step 3

In a large bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, 1/2 cup of Parmesan cheese, thawed and squeezed-dry spinach, egg, salt, pepper, and nutmeg. Mix until well combined.

Step 4

Spread 1 cup of marinara sauce evenly in the bottom of the prepared baking dish.

Step 5

Lay a cooked lasagna noodle flat on a clean surface. Spread about 3 tablespoons of the ricotta mixture evenly over the noodle. Roll up the noodle tightly from one end to the other and place it seam side down in the prepared baking dish. Repeat with the remaining noodles and filling.

Step 6

Top the lasagna rolls with the remaining marinara sauce, ensuring that all rolls are covered with sauce to stay moist during baking.

Step 7

Sprinkle the remaining 1 cup of mozzarella cheese and 1/2 cup of Parmesan cheese over the top of the sauce-covered rolls.

Step 8

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 20-25 minutes, or until the cheese is golden and bubbly.

Step 9

Let the lasagna rolls rest for 5-10 minutes before serving. Serve warm with a side of garlic bread or a fresh salad.
