Ingredients

  • 12 ounces Fettuccine
  • 4 tablespoons Unsalted butter
  • 1 cup All-purpose flour
  • 4 cups Whole milk
  • 2 cups Asiago cheese, grated
  • 1 cup Parmesan cheese, grated
  • 1 tablespoon Thyme leaves, fresh
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 cup Panko breadcrumbs
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the fettuccine until al dente according to package instructions. Drain and set aside.

Step 3

In a medium-sized saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.

Step 4

Gradually whisk in the whole milk, ensuring no lumps form. Continue to cook and stir until the sauce thickens, about 5-7 minutes.

Step 5

Remove the saucepan from heat and stir in the Asiago cheese, Parmesan cheese, fresh thyme, salt, and ground black pepper. Mix until the cheese is fully melted and the sauce is smooth and creamy.

Step 6

In a large mixing bowl, combine the cooked fettuccine and the cheese sauce. Toss until the pasta is evenly coated.

Step 7

Transfer the pasta mixture to a greased 9x13-inch baking dish, spreading it out in an even layer.

Step 8

In a small bowl, mix the panko breadcrumbs with olive oil until the crumbs are lightly coated. Sprinkle the breadcrumb mixture evenly over the top of the pasta.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the pasta is bubbling around the edges.

Step 10

Remove the baking dish from the oven and let it rest for 5 minutes before serving. Garnish with additional thyme leaves if desired.
