  • 60 grams Parmigiano-Reggiano cheese, freshly grated
  • 40 grams Pecorino Romano cheese, freshly grated
  • 1 clove garlic, smashed
  • 2 teaspoons black pepper, freshly ground
  • 1 tablespoon olive oil
  • 1 tablespoon kosher salt

Directions

Step 1

Bring a large pot of water to a boil and add 1 tablespoon of kosher salt. Once boiling, add the spaghetti and cook until al dente according to package instructions. Reserve 1 cup of pasta cooking water, and then drain the pasta.

Step 2

While the pasta is cooking, prepare the guanciale. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the smashed garlic clove and cook for 1-2 minutes until fragrant, then remove and discard the garlic.
