  • 2 pounds chicken (cut into pieces)
  • 4 medium fresh tomatoes

  • 1 cup smooth peanut butter
  • 6 cups water or chicken stock
  • 2 tablespoons canned tomato paste
  • 2 tablespoons vegetable oil (or palm oil)
  • 0.5 teaspoons ground cayenne pepper (optional)
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 whole scotch bonnet pepper (optional)

Directions

Step 1

1. Season the chicken pieces with salt and black pepper. Set aside.

Step 2

2. Blend the tomatoes, red bell pepper, onion, garlic cloves, and ginger in a blender until smooth. Pour the blended mixture into a large bowl and set aside.

3. In a large pot, heat the vegetable oil over medium heat. Add the seasoned chicken pieces and sear them on all sides until lightly browned, about 5-7 minutes. Remove the chicken from the pot and set aside.

4. In the same pot, pour the blended tomato mixture and cook over medium heat for 10 minutes, stirring occasionally to prevent sticking.
