  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Shallots, minced
  • 2 cloves Garlic, minced
  • 0.5 cups Dry sherry
  • 2 tablespoons Dijon mustard
  • 1 cup Heavy cream
  • 0.5 cups Chicken broth
  • 1 teaspoon Fresh thyme leaves
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season both sides of the chicken breasts with salt and pepper.

Step 2

Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Step 3

Add the chicken breasts to the skillet and cook for 4-5 minutes per side, or until golden brown and fully cooked (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set aside.

Reduce the heat to medium-low and add the remaining tablespoon of butter to the skillet.

Add the minced shallots and garlic to the skillet. Sauté for 2-3 minutes, stirring frequently, until softened and fragrant.
