Ingredients

  • 1.5 pounds Ground beef
  • 0.5 pounds Ground pork
  • 1 cup Breadcrumbs
  • 2 large Eggs
  • 0.5 cup Milk
  • 1 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 0.25 cup Ketchup
  • 0.5 cup, finely chopped Dill pickles
  • 0.5 cup Mayonnaise
  • 0.25 cup Sour cream
  • 2 tablespoons Dill pickle juice
  • 1 tablespoon, finely chopped Fresh dill

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, eggs, milk, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix well until fully combined.

Step 3

Transfer the mixture to a greased or parchment-lined loaf pan, shaping it into a loaf. Spread the ketchup evenly over the top of the meatloaf for a glossy glaze.

Step 4

Place the loaf pan into the preheated oven and bake for 60 minutes or until the internal temperature reaches 160°F (71°C).

Step 5

While the meatloaf bakes, prepare the dill pickle sauce. In a small bowl, combine the finely chopped dill pickles, mayonnaise, sour cream, dill pickle juice, and fresh dill. Mix until smooth and set aside in the refrigerator to chill.

Step 6

Once the meatloaf is cooked, remove it from the oven and let it rest for 10 minutes before slicing.

Step 7

Serve the meatloaf warm with a generous drizzle of the dill pickle sauce on top or on the side for dipping. Enjoy!
