Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 1 large green bell pepper
  • 4 medium garlic cloves
  • 1.5 pounds ground beef
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 28 ounces diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 15 ounces kidney beans
  • 15 ounces pinto beans
  • 0.25 cup fresh cilantro
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup sour cream

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Dice the onion and green bell pepper, then sauté in the pot for 5 minutes until softened.

Step 3

Mince the garlic cloves and add them to the pot, cooking for an additional minute until fragrant.

Step 4

Add the ground beef to the pot and cook, breaking it apart with a wooden spoon, until browned and fully cooked. Drain any excess grease if necessary.

Step 5

Stir in chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and black pepper. Cook for 1 minute to toast the spices.

Step 6

Add the diced tomatoes, tomato paste, and beef broth. Stir to combine.

Step 7

Drain and rinse the kidney beans and pinto beans, then add them to the pot. Mix well.

Step 8

Bring the chili to a gentle boil, then lower the heat to simmer. Cover and let cook for 30 minutes, stirring occasionally to prevent sticking.

Step 9

Taste and adjust seasoning if needed. If the chili is too thick, add more beef broth, a quarter cup at a time, until the desired consistency is reached.

Step 10

Roughly chop the fresh cilantro and stir it into the chili just before serving.

Step 11

Ladle the chili into bowls and top with shredded cheddar cheese and a dollop of sour cream. Serve warm with your favorite accompaniments like tortilla chips or cornbread.
