Directions

Step 1

Wash the spinach or chard thoroughly under cold water to remove any dirt or grit. If using chard, cut out the thick stems and roughly chop the leaves.

Bring a large pot of water to a boil. Blanch the spinach or chard for 1-2 minutes, then transfer it immediately into a bowl of ice water to stop the cooking process. Drain well and squeeze out excess water. Roughly chop the blanched greens and set aside.
