Ingredients

  • 800 g fresh kale
  • 1 medium onion
  • 150 g smoked bacon (diced)
  • 750 ml vegetable broth
  • 500 g potatoes
  • 4 links smoked sausage (e.g., Mettwurst or Kielbasa)
  • 2 tbsp mustard
  • 2 tbsp lard or vegetable oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg

Directions

Step 1

Wash the fresh kale thoroughly, remove the tough stems, and roughly chop the leaves. Set aside.

Step 2

Peel and finely dice the onion.

Step 3

Heat the lard or vegetable oil in a large pot over medium heat. Add the diced onion and smoked bacon, and sauté until the onion is translucent and the bacon is slightly browned.

Add the chopped kale to the pot in batches, stirring until it wilts down. Repeat until all the kale is added.

Pour the vegetable broth into the pot. Stir well, cover, and reduce the heat to a simmer. Cook for 45 minutes, stirring occasionally.
