Ingredients

  • 4 medium Potatoes (waxy variety, e.g., Yukon Gold)
  • 4 slices Bacon
  • 1 medium Yellow onion
  • 2 tablespoons Butter
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Fresh parsley (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Paprika (optional)

Directions

Step 1

Wash and peel the potatoes if desired (you can leave the skins on for extra texture). Cut them into 1/4-inch slices and rinse under cold water to remove excess starch. Pat them dry thoroughly with a clean towel.

Step 2

Dice the bacon into small pieces. Peel and finely chop the onion. Set both aside.

Step 3

In a large skillet, heat 1 tablespoon of butter and 2 tablespoons of vegetable oil over medium heat.

Step 4

Add the potato slices in a single layer to the skillet. Cook them without stirring for about 5-7 minutes, allowing the bottom side to become golden and crispy.

Step 5

Flip the potatoes carefully using a spatula and continue cooking for another 5-7 minutes until they are golden brown on both sides. Remove the potatoes from the skillet and set them aside on a plate.

Step 6

In the same skillet, add the diced bacon and cook over medium heat until it becomes crispy, about 5 minutes. Remove the bacon with a slotted spoon and set it aside, leaving the rendered fat in the skillet.

Step 7

Add the chopped onion to the skillet and sauté in the bacon fat for 3-4 minutes until softened and lightly caramelized.

Step 8

Return the cooked potatoes and bacon to the skillet. Toss everything gently to combine, cooking for 2-3 more minutes to heat through.

Step 9

Season the mixture with salt, pepper, and paprika (if using). Taste and adjust the seasoning as needed.

Step 10

Optional: Sprinkle freshly chopped parsley over the fried potatoes before serving for a pop of color and added flavor.

Step 11

Serve hot as a side dish or enjoy it as a main course with a fried egg on top for a traditional German-style meal.
