Ingredients

  • 12 oz Spam
  • 4 medium Potatoes
  • 2 cups Sauerkraut
  • 1 medium Onion
  • 1 tbsp Butter
  • 1 cup Sour cream
  • 1 cup Shredded Swiss cheese
  • 1 tsp Paprika
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and dice the potatoes into 1/2-inch cubes. Boil them in salted water for 8-10 minutes until just tender, then drain and set aside.

Step 3

While the potatoes cook, dice the Spam and chop the onion into small pieces.

Step 4

In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened and translucent.

Step 5

Add the diced Spam to the skillet and cook for an additional 5-6 minutes until lightly browned.

Step 6

In a large mixing bowl, combine the boiled potatoes, cooked Spam and onions, sauerkraut, sour cream, salt, and black pepper. Mix gently to ensure the ingredients are evenly distributed.

Step 7

Transfer the mixture to a greased 9x13-inch casserole dish, spreading it out evenly.

Step 8

Sprinkle the shredded Swiss cheese evenly over the top of the casserole.

Step 9

Dust the top with paprika for color and flavor.

Step 10

Bake the casserole in the preheated oven for 30-35 minutes, or until the cheese is melted and golden brown.

Step 11

Remove the casserole from the oven and let it cool for 5 minutes before serving.

Step 12

Serve warm and enjoy your German Spam Casserole!
