Ingredients

  • 4 medium Russet potatoes

  • 1 cup Frozen corn kernels

Directions

Step 1

Peel and dice the russet potatoes into 1-inch cubes. Place them in a pot, cover with water, and add 1 teaspoon of salt. Bring to a boil and cook for 8-10 minutes until just fork-tender. Drain and set aside.

While the potatoes are boiling, peel and dice the carrots into small pieces. Finely chop the onion. Set aside.
