  • 2 lbs pork shoulder (or pork loin)

  • 32 oz sauerkraut, drained
  • 1 medium apple, peeled and sliced
  • 1 tsp caraway seeds
  • 1 tbsp brown sugar
  • 1 cup chicken stock
  • 1 leaf Bay leaf

Directions

Step 1

Season the pork shoulder with salt and pepper on all sides.

Step 2

In a large Dutch oven or heavy-bottomed pot, heat the vegetable oil over medium-high heat.

Add the pork to the pot and brown on all sides, about 2-3 minutes per side. Remove and set aside.

In the same pot, add the sliced onion and cook until soft and translucent, about 5 minutes.
