Ingredients

  • 12 oz Egg noodles
  • 1 lb Ground beef
  • 1 large, diced Onion
  • 14 oz (drained) Sauerkraut
  • 10.5 oz can Cream of mushroom soup
  • 1 cup Sour cream
  • 2 cups Shredded Swiss cheese
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Butter
  • 2 tbsp, chopped Parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C), or set your crock pot to low if using.

Step 2

Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions, then drain and set aside.

Step 3

In a large skillet, melt the butter over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it into crumbles as it cooks. Drain any excess grease.

Step 5

Stir in the sauerkraut, cream of mushroom soup, sour cream, salt, and pepper. Mix well and cook for another 2 minutes until heated through.

Step 6

In a large mixing bowl, combine the cooked egg noodles and the beef mixture. Mix until the noodles are evenly coated.

Step 7

If baking in the oven, transfer the mixture into a greased 9x13-inch baking dish. Sprinkle the shredded Swiss cheese evenly over the top.

Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.

If using a crock pot, transfer the noodle mixture to the crock pot and sprinkle the Swiss cheese on top. Cover and cook on low for 4 hours or on high for 2 hours, or until heated through and the cheese has melted.

Once cooked, remove from the oven or crock pot and let rest for 5 minutes. Garnish with chopped parsley if desired before serving.
