Ingredients

  • 500 g Fresh button mushrooms
  • 1 medium Yellow onion
  • 2 cloves Garlic
  • 2 tbsp Olive oil
  • 3 tbsp White wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Sugar
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley
  • 1 tbsp Chives

Directions

Step 1

Clean the mushrooms by wiping them with a damp paper towel and slice them into thin, even pieces.

Step 2

Peel and finely chop the onion. Mince the garlic cloves.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Add the chopped onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 5

Add the sliced mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are tender and lightly browned. Remove from heat and allow to cool slightly.

Step 6

In a small bowl, whisk together the white wine vinegar, Dijon mustard, sugar, salt, and black pepper to make the dressing.

Pour the dressing over the slightly cooled mushroom mixture and toss to coat evenly.
