  • 1 medium onion
  • 2 medium carrot
  • 2 pieces celery stalk
  • 3 medium potatoes
  • 2 pieces garlic cloves
  • 1 piece bay leaf
  • 1 teaspoon dried marjoram
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 pieces frankfurters
  • 2 tablespoons parsley (optional, for garnish)

Directions

Step 1

Rinse the lentils under cold water and set aside.

Step 2

In a large pot, heat the olive oil over medium heat.

Step 3

Peel and finely chop the onion, garlic, and carrots. Dice the celery and potatoes into small cubes.

Step 4

Add the chopped onion and garlic to the pot and sauté for 2-3 minutes until fragrant.

Step 5

Add the carrots, celery, and potatoes to the pot and cook for another 5 minutes, stirring occasionally.

Pour in the water and add the vegetable broth cubes. Stir to dissolve the cubes.

Step 7

Add the rinsed lentils, bay leaf, dried marjoram, salt, and pepper to the pot. Stir to combine.

Step 8

Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 35-40 minutes until the lentils and vegetables are tender.

Step 9

While the soup is simmering, slice the frankfurters into 1-inch pieces.

Step 10

Once the soup is cooked, add the frankfurters to the pot and let them heat through for 5-7 minutes.

Step 11

Taste the soup and adjust seasoning with more salt or pepper if needed.

Step 12

Serve the soup hot in bowls, and garnish with chopped parsley if desired.
