Peel the white asparagus spears from just below the tips to the ends and snap off the tough ends.
Bring 500 ml of water to a boil in a large pot. Add 1 teaspoon of sugar and a pinch of salt. Add the peeled asparagus and simmer for 8–10 minutes until tender but still firm. Drain and set aside.
In a large skillet, melt 2 tablespoons of unsalted butter with 1 tablespoon of olive oil over medium heat.
In a shallow bowl, mix breadcrumbs and grated Parmesan cheese. Dredge the blanched asparagus spears in the mixture, pressing lightly to coat them fully.
Place the coated asparagus in the skillet and fry for 2–3 minutes on each side until golden brown and crispy. Remove and set aside on a paper towel-lined plate.
