Ingredients

  • 500 g Potatoes
  • 150 g Bacon
  • 1 large Yellow onion
  • 4 Eggs
  • 50 ml Milk
  • 1 tbsp Butter
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 1 tbsp Chives or parsley (optional, for garnish)

Directions

Step 1

Peel the potatoes and dice them into small cubes (about 1-2 cm).

Step 2

Place the diced potatoes in a saucepan of salted water and bring to a boil. Simmer for about 8-10 minutes or until they are just tender. Drain the potatoes and set them aside.

Step 3

While the potatoes are cooking, dice the bacon into small pieces. Finely chop the onion.

Step 4

In a large, heavy skillet or frying pan, heat the butter over medium heat. Add the bacon and cook for 3-4 minutes until crispy.

Step 5

Add the chopped onion to the skillet and sauté for another 2-3 minutes until the onion becomes translucent.

Step 6

Add the boiled potatoes to the skillet with the bacon and onion. Cook for 6-8 minutes, stirring occasionally, until the potatoes are golden and slightly crispy.

Step 7

In a small bowl, whisk the eggs with the milk, a pinch of salt, and black pepper.

Step 8

Pour the whisked eggs evenly over the potato mixture in the skillet. Reduce the heat to low and let cook, undisturbed, for 3-5 minutes, or until the eggs are set but still slightly moist.

Step 9

Gently fold the mixture once or twice to distribute the eggs evenly throughout the dish. Be careful not to overcook.

Step 10

Remove from heat and transfer to plates. Garnish with chopped chives or parsley, if desired. Serve immediately and enjoy!
