  • 6 slices Bacon
  • 1 large Yellow onion

Directions

Step 1

Rinse the potatoes thoroughly and place them in a large pot. Cover with water and bring to a boil. Reduce heat to medium and cook for about 10 minutes or until just tender but not fully cooked.

Drain the potatoes and let them cool. Once cooled, peel the skins off and slice them into 1/4-inch thick rounds.
