Directions

Step 1

In a medium-sized saucepan, combine the evaporated milk, granulated sugar, brown sugar, and unsalted butter over low heat. Stir until the sugar dissolves and the butter melts completely.

Step 2

In a small bowl, whisk the egg yolks until thoroughly combined. Gradually add a few tablespoons of the warm milk mixture into the egg yolks while whisking constantly to temper them.

Slowly pour the tempered egg yolks back into the saucepan, stirring continuously to prevent curdling.
