Ingredients

  • 4 tablespoons unsalted butter
  • 2 pieces large apple (such as Granny Smith or Honeycrisp)
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 4 pieces large eggs
  • 0.25 teaspoons kosher salt
  • 2 tablespoons powdered sugar (optional, for serving)

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Peel, core, and slice the apples into thin wedges.

Step 3

In a 10-inch ovenproof skillet (cast iron is ideal), melt the butter over medium heat. Reserve 1 tablespoon of melted butter for later use.

Step 4

Add the apple slices to the skillet and sprinkle with granulated sugar and cinnamon. Cook the apples for 4-5 minutes, stirring occasionally, until they are softened and lightly caramelized.

Step 5

In a medium mixing bowl, whisk together the flour, milk, vanilla extract, eggs, reserved melted butter, and kosher salt until the batter is smooth and lump-free.

Step 6

Pour the batter evenly over the caramelized apples in the skillet. Do not stir.

Step 7

Transfer the skillet to the preheated oven and bake for 18-22 minutes, or until the pancake puffs up and the edges are golden brown.

Step 8

Remove the skillet from the oven and let the pancake cool slightly. The pancake will deflate slightly as it cools.

Step 9

Dust the pancake with powdered sugar, if desired, and slice into wedges. Serve warm and enjoy!
