Ingredients

  • 4 pieces Chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Butter
  • 2 cloves Garlic cloves, minced
  • 3 tablespoons All-purpose flour
  • 2 cups Chicken broth
  • 1 cup Heavy cream
  • 2 medium Carrots, diced
  • 2 stalks Celery stalks, diced
  • 1 cup Frozen peas
  • 1 cup Cheddar cheese, shredded
  • 1 cup Bread crumbs
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Cook the chicken for 4-5 minutes per side until golden brown. Remove from the skillet and set aside to cool slightly, then chop into bite-sized pieces.

Step 3

In the same skillet, lower the heat to medium and add the butter. Once melted, stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Sprinkle the flour into the skillet and whisk constantly for 1-2 minutes to form a roux. Slowly add the chicken broth while continuously whisking to prevent lumps from forming. Stir in the heavy cream, and bring the mixture to a gentle simmer.

Step 5

Add the diced carrots, celery, and peas to the skillet. Simmer for 5-7 minutes, or until the vegetables are slightly tender but still vibrant. Season with the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 6

Remove the skillet from heat and stir in the shredded cheddar cheese until melted. Add the chopped chicken to the skillet and mix to combine.

Step 7

Pour the creamy chicken and vegetable mixture into the prepared baking dish, spreading it out evenly.

Step 8

In a small bowl, mix the breadcrumbs, grated Parmesan cheese, and the remaining 1 tablespoon of olive oil. Sprinkle this topping evenly over the chicken mixture in the baking dish.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and the filling is bubbling around the edges.

Step 10

Remove from the oven and let the chicken bake rest for 5-10 minutes before serving. Garnish with chopped parsley if desired. Enjoy!
