  • 2 pounds Yukon Gold potatoes

  • 1 cup Mayonnaise

  • 0.25 cup Fresh parsley, chopped
  • 2 tablespoons Fresh dill, chopped
  • 3 Hard-boiled eggs, chopped
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika (optional, for garnish)

Directions

Step 1

Wash and peel the potatoes, if desired. Cut them into 1-inch cubes for even cooking.

In a large pot, add the cubed potatoes and cover with cold, salted water. Add 1 tablespoon of salt. Bring the water to a boil over high heat, then reduce to a simmer. Cook the potatoes for 15-20 minutes, or until fork-tender.
