Ingredients

  • 4 Eggs
  • 1 cup Low-fat cottage cheese
  • 0.5 cup Rolled oats
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 1 teaspoon Low-calorie sweetener (optional)
  • 1 teaspoon Cooking spray or butter

Directions

Step 1

In a blender, combine eggs, cottage cheese, rolled oats, vanilla extract, baking powder, ground cinnamon, salt, and sweetener (if using). Blend until the mixture is smooth and well combined. The batter will be slightly thick.

Step 2

Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a small amount of butter.

Step 3

Pour about 1/4 cup of the batter onto the skillet for each pancake. Use the back of a spoon to spread the batter into a circular shape if needed.

Step 4

Cook the pancakes for 2-3 minutes on the first side, or until bubbles start to form on the surface and the edges look set. Flip and cook for another 2-3 minutes on the other side until golden brown and cooked through.

Step 5

Repeat with the remaining batter, greasing the skillet as necessary between batches.

Step 6

Serve the pancakes warm. Optional topping ideas include fresh fruit, sugar-free syrup, or a dollop of Greek yogurt for extra protein.
