Ingredients

  • 8 pieces Bone-in, skin-on chicken thighs
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 teaspoons Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Vegetable oil
  • 1 cup Ketchup
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Mustard (yellow or Dijon)
  • 1 teaspoon Hot sauce (optional)

Directions

Step 1

Preheat your grill to medium heat (around 350°F). If using a charcoal grill, prepare a two-zone fire with coals on one side for indirect heat.

Step 2

Pat the chicken thighs dry with paper towels. Season both sides evenly with salt, black pepper, paprika, garlic powder, and onion powder.

Step 3

Drizzle the chicken with vegetable oil and rub the seasoning and oil into the meat to ensure even coating. Set aside while you prepare the barbecue sauce.

Step 4

In a small saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, mustard, and hot sauce (if using). Stir well and bring to a light simmer.

Step 5

Cook the barbecue sauce for about 5 minutes, stirring occasionally, until it thickens slightly. Remove from heat and set aside.

Step 6

Place the chicken thighs on the grill skin-side down over direct heat. Grill for 5–7 minutes, or until the skin is golden brown and crisp. Watch for flare-ups and move the chicken away from flames if necessary.

Step 7

Flip the chicken and move it to the indirect heat zone of the grill. Cover the grill and continue cooking for 25–30 minutes, or until the internal temperature of the chicken reaches 165°F.

Step 8

Brush the chicken generously with the prepared barbecue sauce on both sides. Grill over direct heat for 1–2 minutes per side to caramelize the sauce.

Step 9

Remove the chicken from the grill and let it rest for 5 minutes before serving.

Step 10

Serve George’s Barbecued Chicken with extra barbecue sauce on the side and your favorite sides like coleslaw, baked beans, or cornbread.
