Ingredients

  • 1 pound Dried black beans
  • 3 tablespoons Olive oil
  • 1 large Onion, diced
  • 2 stalks Celery, diced
  • 2 medium Carrot, diced
  • 4 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 6 cups Chicken or vegetable broth
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh lime juice
  • 0.25 cup Sour cream or yogurt (for garnish)
  • 2 tablespoons Chopped fresh cilantro (for garnish)
  • 0.5 piece Diced avocado (optional, for garnish)

Directions

Step 1

Rinse the dried black beans thoroughly under cold running water. Place them in a large bowl, cover with water, and soak overnight. Drain and set aside.

Step 2

In a large soup pot, heat the olive oil over medium heat. Add the diced onion, celery, and carrot. Cook, stirring frequently, for 5-7 minutes, or until the vegetables are softened.

Step 3

Add the minced garlic, ground cumin, smoked paprika, and dried oregano. Stir and cook for 1-2 minutes, allowing the spices to bloom and become fragrant.

Step 4

Add the soaked and drained black beans to the pot, followed by the chicken or vegetable broth and the bay leaf. Stir to combine.

Step 5

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for about 1.5 to 2 hours, or until the beans are tender and the flavors have developed. Stir occasionally to prevent sticking.

Step 6

Remove the bay leaf from the pot. Using an immersion blender, puree a portion of the soup (about half the pot) to create a creamy texture. Alternatively, carefully transfer half the soup to a blender, blend until smooth, and return it to the pot.

Step 7

Season the soup with salt and black pepper, adjusting to taste. Stir in the fresh lime juice just before serving.

Step 8

Ladle the soup into bowls and top with a dollop of sour cream or yogurt. Garnish with chopped cilantro and diced avocado if desired. Serve with crusty bread or tortilla chips on the side.
