  • 1 lb boneless skinless chicken thighs

  • 1 tbsp soy sauce
  • 2 cups vegetable oil

  • 1 tsp fresh ginger, minced
  • 4 pieces dried red chilies (optional)
  • 3 tbsp hoisin sauce
  • 2 tbsp rice vinegar
  • 2 tbsp light soy sauce
  • 3 tbsp sugar
  • 0.25 cup water
  • 1 tsp cornstarch (for sauce)
  • 2 stalks scallions, sliced
  • 1 tbsp sesame seeds (optional for garnish)

Directions

Step 1

Cut the chicken thighs into bite-sized chunks and place them in a mixing bowl.

Step 2

In a small bowl, whisk the egg and 1 tablespoon of soy sauce until combined. Pour this mixture over the chicken chunks and toss to coat.

Step 3

In another bowl, combine 0.5 cup of cornstarch and 0.5 cup of all-purpose flour. Dredge the marinated chicken chunks in this mixture, ensuring they are fully coated. Set aside.
