Ingredients

  • 1 lb boneless, skinless chicken breast
  • 2 tbsp cornstarch
  • 1 cup low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp sugar substitute
  • 2 tsp minced garlic
  • 1 tsp minced fresh ginger
  • 0.5 tsp crushed red pepper flakes
  • 2 green onions (chopped)
  • 1 spray non-stick cooking spray
  • 2 cups steamed broccoli or cauliflower rice (optional, for serving)

Directions

Step 1

Clean and cut the chicken breast into bite-size pieces.

Step 2

In a large bowl, toss the chicken pieces with 1 tablespoon of cornstarch until evenly coated.

Step 3

In a small mixing bowl, whisk together the remaining 1 tablespoon of cornstarch, chicken broth, soy sauce, hoisin sauce, rice vinegar, sesame oil, sugar substitute, minced garlic, ginger, and red pepper flakes. Set it aside.

Step 4

Heat a large non-stick skillet or wok over medium-high heat and spray it with non-stick cooking spray.

Step 5

Add the chicken pieces to the skillet in a single layer and cook for 5-6 minutes, turning occasionally, until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.

Step 6

Pour the prepared sauce mixture into the same skillet and cook over medium heat, stirring frequently, until the sauce thickens, about 2-3 minutes.

Step 7

Return the cooked chicken to the skillet and toss it in the sauce until fully coated and heated through, about 2 minutes.

Step 8

Garnish with chopped green onions and serve immediately. Optionally, serve with steamed broccoli or cauliflower rice to complete the meal.
