  • 1 pound Boneless, skinless chicken thighs
  • 0.5 cup Cornstarch
  • 0.25 cup All-purpose flour
  • 2 large Eggs
  • 2 tablespoons Soy sauce
  • 4 cups Vegetable oil (for frying)
  • 4 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 4 whole Dried red chili peppers
  • 0.25 cup Brown sugar
  • 3 tablespoons Rice vinegar
  • 2 tablespoons Hoisin sauce
  • 3 tablespoons Soy sauce (for sauce)
  • 0.5 cup Chicken broth
  • 2 teaspoons Cornstarch (for sauce slurry)
  • 2 teaspoons Water
  • 2 stalks Green onions, sliced
  • 1 teaspoon Sesame seeds

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

In a large bowl, combine the cornstarch, all-purpose flour, and a pinch of salt. In a separate bowl, whisk eggs with 2 tablespoons of soy sauce.

Step 3

Dredge the chicken pieces in the flour mixture, then dip them into the egg mixture, and return them back to the flour mixture, coating evenly.

Heat the vegetable oil in a deep skillet or wok over medium-high heat to about 350°F (175°C). Fry the chicken pieces in batches until golden brown and cooked through, about 5-6 minutes per batch. Remove and drain on paper towels.
