Ingredients

  • 1 lb Boneless, skinless chicken thighs
  • 1 large Egg
  • 1.5 cups Cornstarch
  • 2 cups Vegetable oil
  • 0.25 cup Soy sauce
  • 2 tablespoons Rice vinegar
  • 2 tablespoons Hoisin sauce
  • 3 tablespoons Sugar
  • 3 cloves Garlic
  • 1 teaspoon Ginger
  • 0.5 teaspoon Dried chili flakes
  • 2 pieces Green onions
  • 1 tablespoon Sesame seeds
  • 0.5 cup Water
  • 1 tablespoon Cornstarch (for sauce)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

In a bowl, whisk the egg and add the chicken pieces. Toss to coat.

Step 3

Place 1.5 cups of cornstarch in a separate bowl and dredge each piece of chicken, ensuring it is evenly coated. Set the coated pieces on a plate.

Step 4

Heat the vegetable oil in a deep skillet or wok over medium-high heat until it reaches 350°F (175°C).

Step 5

Working in batches, fry the chicken pieces until golden-brown and crispy, about 4-5 minutes per batch. Drain on paper towels and set aside.

Step 6

In a small bowl, mix the soy sauce, rice vinegar, hoisin sauce, sugar, and water. Set the mixture aside.

Step 7

Finely mince the garlic and ginger. Slice the green onions into small pieces for garnishing.

Step 8

In the same skillet or wok, remove excess oil, leaving about 1 tablespoon. Heat over medium heat.

Step 9

Add the minced garlic, ginger, and chili flakes. Sauté for 30 seconds until aromatic.

Step 10

Pour in the sauce mixture and bring it to a simmer.

Step 11

In a small bowl, mix 1 tablespoon of cornstarch with 1 tablespoon of water to create a slurry. Add this slurry to the simmering sauce and stir until it thickens, about 1-2 minutes.

Step 12

Add the fried chicken to the skillet and toss to coat evenly in the sauce.

Step 13

Remove from heat and garnish with green onions and sesame seeds.

Step 14

Serve hot with steamed rice or your choice of sides.
