Ingredients

  • 1 pound Chicken thighs (boneless, skinless) cubed
  • 0.5 cup Cornstarch
  • 2 cups Vegetable oil (for frying)
  • 3 tablespoons Soy sauce
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 1 large Egg
  • 2 cloves Garlic cloves (minced)
  • 1 teaspoon Fresh ginger (minced)
  • 0.5 teaspoon Red chili flakes
  • 3 tablespoons Sugar
  • 3 tablespoons Rice vinegar
  • 0.5 cup Chicken broth
  • 1 tablespoon Dark soy sauce
  • 1 teaspoon Sesame oil
  • 2 stalks Scallions (sliced, for garnish)
  • 1 teaspoon Sesame seeds (for garnish)

Directions

Step 1

In a medium bowl, combine the cubed chicken thighs with 1 tablespoon soy sauce, 1 tablespoon shaoxing wine, and the egg. Mix well and let marinate for 10 minutes.

Step 2

In a large resealable bag, add the cornstarch. Working in batches, add the marinated chicken to the bag and shake to coat each piece evenly.

Step 3

Heat the vegetable oil in a deep skillet or wok over medium-high heat until shimmering, around 350°F (175°C). Fry the chicken in batches until golden and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

Step 4

In a small bowl, mix together the remaining soy sauce, shaoxing wine, sugar, rice vinegar, chicken broth, dark soy sauce, and sesame oil. Set aside.

Step 5

In a clean large skillet or wok, heat 1 tablespoon of the frying oil over medium heat. Add the minced garlic, ginger, and red chili flakes, stirring constantly until fragrant, about 30 seconds.

Step 6

Pour the prepared sauce mixture into the skillet and bring it to a gentle simmer. Let it cook for 2-3 minutes, allowing it to thicken slightly.

Step 7

Add the fried chicken to the skillet and toss to coat evenly in the sauce. Cook for an additional 2 minutes until the chicken is heated through and well-glazed.

Step 8

Transfer the General Tso's Chicken to a serving platter. Garnish with sliced scallions and sesame seeds.

Step 9

Serve immediately with steamed rice or your choice of side dishes.
