Ingredients

  • 1.5 pounds boneless, skinless chicken thighs
  • 1 cup cornstarch
  • 2 cups vegetable oil
  • 1.5 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons hoisin sauce
  • 3 tablespoons sugar
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 4 dried red chili peppers
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 scallions, chopped
  • 1 tablespoon sesame seeds, optional

Directions

Step 1

Cut the chicken thighs into 1-inch pieces.

Step 2

Place the chicken pieces in a bowl and add 1 tablespoon of soy sauce. Toss to coat evenly and set aside for 10 minutes.

Step 3

Coat the chicken pieces thoroughly in 1 cup of cornstarch. Make sure each piece is well-coated.

Step 4

In a large skillet or deep fryer, heat 2 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Step 5

Fry the chicken pieces in batches, being careful not to overcrowd the pan, until they are golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

Step 6

In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry and set aside.

Step 7

In a separate bowl, combine the remaining soy sauce, rice vinegar, hoisin sauce, and sugar. Stir well to dissolve the sugar.

Step 8

In a clean skillet, heat a small amount of oil over medium heat. Add the minced garlic, ginger, and dried red chili peppers. Stir-fry for 1 minute until fragrant.

Step 9

Add the sauce mixture to the skillet and bring to a simmer.

Step 10

Stir the cornstarch slurry into the sauce to thicken it, cooking for 2-3 minutes.

Step 11

Add the fried chicken pieces to the sauce, tossing well to coat all pieces evenly.

Step 12

Garnish with chopped scallions and sesame seeds.

Step 13

Serve hot with steamed rice or noodles.
