Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium bell peppers (red, orange, or yellow), diced
  • 2 medium carrots, diced
  • 1 medium zucchini, diced
  • 4 cloves garlic cloves, minced
  • 28 ounces canned diced tomatoes (with juices)
  • 15 ounces canned black beans, drained and rinsed
  • 15 ounces canned kidney beans, drained and rinsed
  • 2 cups vegetable broth
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (optional for garnish)
  • 4 wedges lime wedges (optional for serving)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion, bell peppers, and carrots. Sauté for 5-7 minutes, stirring occasionally, until the vegetables soften.

Step 3

Stir in the diced zucchini and minced garlic. Cook for an additional 2 minutes, until fragrant.

Step 4

Add the canned diced tomatoes (with their juices), black beans, kidney beans, vegetable broth, and tomato paste to the pot. Stir to combine.

Step 5

Sprinkle in chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Mix well to ensure the spices are evenly distributed.

Step 6

Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for 30 minutes, stirring occasionally.

Step 7

Taste the chili and adjust seasoning, if necessary. Add more salt or spices to suit your preference.

Step 8

Once the chili is thickened and the flavors are well combined, remove from heat.

Step 9

Ladle the chili into bowls and garnish with fresh cilantro, if desired.

Step 10

Serve with lime wedges on the side for a burst of citrus flavor.
