Ingredients

  • 2 tablespoons lard or vegetable oil
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chili powder (preferably Gebhardt's)
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups low-sodium chicken broth

Directions

Step 1

In a medium saucepan, heat the lard or vegetable oil over medium heat until hot but not smoking.

Step 2

Add the all-purpose flour to the saucepan. Stir constantly to create a smooth and golden-brown roux, about 2-3 minutes.

Step 3

Reduce the heat to low and sprinkle in the chili powder, ground cumin, onion powder, garlic powder, dried oregano, salt, and black pepper. Stir well to combine all the spices with the roux.

Step 4

Gradually pour in the chicken broth, about 1/4 cup at a time, whisking constantly to prevent lumps from forming.

Step 5

Increase the heat to medium and continue whisking until the mixture starts to thicken, about 3-4 minutes.

Step 6

Once the gravy reaches your desired consistency, reduce the heat to low and let it simmer for an additional 2-3 minutes to allow the flavors to meld.

Step 7

Taste and adjust seasoning as needed. If the gravy is too thick, add a splash of chicken broth to thin it out.

Step 8

Remove the saucepan from the heat. Serve immediately over enchiladas, tacos, or as a sauce for your favorite dishes.
