Ingredients

  • 4 pieces (6-8 oz each) Ribeye or sirloin steak
  • 3 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 1.5 teaspoons Freshly ground black pepper
  • 4 small, minced Garlic cloves
  • 1 cup (chopped) Fresh parsley
  • 0.5 cup (chopped, optional) Fresh cilantro
  • 0.5 teaspoons Red chili flakes
  • 3 tablespoons Red wine vinegar
  • 1 tablespoon Lemon juice

Directions

Step 1

Pat the steaks dry with paper towels to remove excess moisture.

Step 2

Rub the steaks with 2 tablespoons of olive oil, ensuring an even coating on all sides.

Step 3

Season both sides of the steaks generously with salt and freshly ground black pepper. Set aside to rest at room temperature for about 15 minutes.

Step 4

While the steaks rest, prepare the chimichurri sauce. In a small bowl, combine the minced garlic, parsley, cilantro (if using), red chili flakes, 1 tablespoon olive oil, red wine vinegar, and lemon juice. Mix well to combine and season with a pinch of salt. Set aside for the flavors to meld.

Step 5

Preheat a grill or cast-iron skillet over high heat until very hot.

Step 6

Place the steaks on the grill or skillet. Cook for 4-5 minutes on each side for medium-rare, or adjust the cooking time according to your desired doneness.

Step 7

Remove the steaks from the heat and let them rest on a cutting board for 5 minutes to allow the juices to redistribute.

Step 8

Slice the steaks against the grain to ensure tenderness, if serving pre-sliced.

Step 9

Serve the steak hot, drizzled generously with the chimichurri sauce. Pair with grilled vegetables or a fresh baguette for a complete meal.
