Preheat your oven to 180°C (350°F). Grease and line a 23cm (9-inch) springform cake tin with butter and parchment paper.
Wash the oranges thoroughly. Place the whole oranges in a pot, cover with water, and bring to a boil. Simmer for 45 minutes until soft. Drain the water and let the oranges cool.
Once cooled, cut the oranges into quarters, remove any seeds, and blend them (peel included) in a food processor until smooth.
In a large bowl, beat the sugar and eggs together using an electric mixer until pale and fluffy.
Fold the orange puree into the egg mixture until combined.
In a separate bowl, whisk together the almond flour, all-purpose flour, and baking powder.
Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Do not overmix.
Stir in the olive oil until fully incorporated.
