Ingredients

  • 10 whole habanero peppers
  • 1 cup white vinegar
  • 2 whole garlic cloves
  • 1 medium carrot
  • 0.5 medium yellow onion
  • 2 tablespoons lime juice
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 1 tablespoon vegetable oil
  • 0.5 cup water

Directions

Step 1

Wash and remove the stems from the habanero peppers. For a milder sauce, remove the seeds (wear gloves for this step to avoid irritation).

Step 2

Peel and dice the carrot, garlic cloves, and onion into small pieces.

Step 3

Heat the vegetable oil in a medium skillet over medium heat. Add the diced onion, carrot, and garlic, and sauté for 5-6 minutes, or until softened and fragrant.

Step 4

Add the habanero peppers to the skillet and cook for another 2 minutes, stirring occasionally.

Step 5

Remove the skillet from heat and carefully transfer the mixture into a blender or food processor.

Step 6

Add the white vinegar, lime juice, sugar, salt, and water to the blender. Blend on high speed until the sauce is smooth and free of any chunks. You can add more water, one tablespoon at a time, if a thinner consistency is desired.

Step 7

Pour the blended mixture into a small pot and bring it to a gentle simmer over low heat. Let it cook for 5 minutes, stirring occasionally to allow the flavors to meld.

Step 8

Remove the pot from heat and let the sauce cool to room temperature.

Step 9

Funnel the cooled sauce into sterilized glass bottles or jars with a tight-fitting lid. Store in the refrigerator for up to 3 months.

Step 10

Shake the bottle before each use and enjoy your Garry's Habanero Hot Sauce on tacos, eggs, grilled meats, or anything that needs an extra kick of heat!
