Ingredients

  • 2 tablespoons olive oil
  • 6 pieces garlic cloves
  • 1 medium yellow onion
  • 6 cups vegetable broth
  • 2 cans cannellini beans
  • 6 cups fresh spinach
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.25 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 0.25 cup parmesan cheese (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Mince the garlic cloves and dice the onion. Add them to the pot and sauté for 3-4 minutes, stirring frequently, until the onion is soft and translucent.

Step 3

Pour in the vegetable broth and bring it to a gentle simmer.

Step 4

Drain and rinse the cannellini beans. Add them to the pot along with the dried thyme, dried rosemary, red pepper flakes, salt, and black pepper. Let the soup simmer for 10 minutes to allow the flavors to meld.

Step 5

Add the fresh spinach to the pot and stir until it wilts, which should take about 2-3 minutes.

Step 6

Stir in the lemon juice and taste the soup. Adjust the seasoning with more salt or pepper if needed.

Step 7

Ladle the soup into bowls and serve warm. Optionally, garnish with grated parmesan cheese for extra flavor.
