Ingredients

  • 1 lb Large shrimp, peeled and deveined
  • 6 tbsp Salted butter
  • 2 tbsp Olive oil
  • 4 cloves Garlic, minced
  • 1 cup Panko bread crumbs
  • 0.5 cup Parmesan cheese, grated
  • 1 tsp Paprika
  • 2 tbsp Fresh parsley, chopped
  • 1 tbsp Lemon juice
  • 1 tsp Zest of lemon
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper, freshly ground

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish and set aside.

Step 2

Pat the shrimp dry with paper towels, season with salt and pepper, and arrange them in a single layer in the baking dish.

Step 3

In a medium skillet, melt 4 tablespoons of butter over medium heat. Add the olive oil and garlic, and cook for 1-2 minutes until fragrant (be careful not to burn the garlic).

Step 4

Add the panko bread crumbs to the skillet. Stir to coat the crumbs evenly with the butter mixture, and toast for 3-4 minutes until golden brown, stirring frequently.

Step 5

Remove the skillet from heat and stir in the Parmesan cheese, paprika, chopped parsley, lemon zest, and a pinch of salt and pepper.

Step 6

Spoon the bread crumb mixture evenly over the shrimp in the baking dish, ensuring all shrimp are well coated.

Step 7

Cut the remaining 2 tablespoons of butter into small pieces and dot them over the breadcrumb topping.

Step 8

Bake in the preheated oven for 15-18 minutes, or until the shrimp are opaque and cooked through, and the topping is bubbly and golden brown.

Step 9

Remove from the oven and drizzle with lemon juice for added brightness.

Step 10

Serve immediately with crusty bread or over a bed of rice to soak up the flavorful juices.
