Ingredients

  • 3 tablespoons olive oil
  • 2 large yellow onion

  • 2 cloves garlic (optional)
  • 1 bunch Swiss chard
  • 0.5 teaspoon ground black pepper
  • 2 cups cooked white beans (such as cannellini or navy beans)
  • 0.25 cup vegetable broth (or water)
  • 0.25 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 2

Thinly slice the onions and add them to the skillet with a pinch of salt. Cook, stirring occasionally, for 15-20 minutes, until the onions are golden brown and caramelized. If they start to stick, add a splash of water to deglaze the pan.

Mince the garlic (if using) and set it aside.
