Ingredients

  • 250 grams Button mushrooms
  • 4 pieces Garlic cloves (finely minced)
  • 200 grams Gram flour (besan)
  • 2 tablespoons Rice flour
  • 1 teaspoon Ground cumin
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 2 tablespoons Coriander leaves (chopped)
  • 150 milliliters Water
  • 500 milliliters Vegetable oil (for frying)

Directions

Step 1

Clean the mushrooms by wiping them with a damp cloth and trim any tough stems. Slice the mushrooms into thick pieces if they are large, or keep them whole if small.

Step 2

In a large mixing bowl, combine gram flour, rice flour, ground cumin, red chili powder, turmeric powder, and salt.

Step 3

Add the minced garlic and chopped coriander leaves to the dry mixture and stir to distribute evenly.

Step 4

Gradually pour water into the mixture, whisking continuously to create a thick but smooth batter. Adjust the water quantity as needed to achieve the right consistency.

Step 5

Heat vegetable oil in a deep frying pan or wok over medium heat until it reaches 180°C (350°F). Test by dropping a small amount of batter into the oil; it should sizzle and float to the surface immediately.

Step 6

Dip the mushrooms into the batter, ensuring they are fully coated. Allow any excess batter to drip off before carefully lowering them into the hot oil.

Step 7

Fry the mushrooms in batches, making sure not to overcrowd the pan. Cook for 3-4 minutes per batch, or until the pakoras are golden and crispy.

Step 8

Using a slotted spoon, remove the pakoras from the oil and place them on a plate lined with paper towels to drain excess oil.

Step 9

Serve the garlicky mushroom pakoras hot with a side of mint chutney or tamarind sauce.
