Ingredients

  • 4 medium zucchini
  • 3 units garlic cloves
  • 3 tablespoons tahini (sesame paste)
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons plain yogurt (optional for creaminess)
  • 1 teaspoon salt
  • 0.5 teaspoons ground cumin
  • 0.5 teaspoons paprika (for garnish)
  • 1 tablespoon chopped parsley (for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and dry the zucchini. Place them on a baking sheet lined with parchment paper.

Step 3

Roast the zucchini in the oven for 20–25 minutes, turning halfway through, until they are soft and slightly charred. Allow them to cool.

While the zucchini cools, peel and mince the garlic cloves.

Once the zucchini has cooled, slice off the ends and peel off most of the skin if desired for a smoother texture. Then chop the zucchini into chunks.
