Ingredients

  • 2 tablespoons olive oil
  • 6 garlic cloves, finely minced
  • 1 medium yellow onion, finely chopped
  • 28 ounces crushed tomatoes (canned)
  • 0.5 cups dry white wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoons crushed red pepper flakes
  • 1 teaspoon granulated sugar
  • 0.5 teaspoons salt
  • 0.25 teaspoons freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large saucepan over medium heat.

Step 2

Add the minced garlic and chopped onion. Sauté for 3-4 minutes, stirring frequently, until the onion is softened and translucent.

Step 3

Deglaze the pan by pouring in the dry white wine, scraping the bottom of the pan with a wooden spoon to pick up any browned bits. Cook for 2-3 minutes until the wine reduces slightly.

Step 4

Stir in the crushed tomatoes, tomato paste, oregano, basil, and red pepper flakes. Mix well until all ingredients are combined.

Step 5

Sprinkle in the granulated sugar, salt, and black pepper. Stir to incorporate.

Step 6

Lower the heat to a simmer and cover the saucepan. Cook for 20-25 minutes, stirring occasionally to prevent sticking.

Step 7

Taste and adjust the seasonings as needed. If the sauce is too acidic, add a pinch more sugar.

Step 8

Once the sauce has thickened to your liking, remove it from the heat.

Step 9

Serve over your favorite pasta, use as a pizza sauce, or as a dipping sauce. Garnish with fresh parsley if desired.
