Ingredients

  • 4 large russet potatoes
  • 2 teaspoons salt
  • 4 tablespoons unsalted butter
  • 0.5 cup whole milk
  • 0.25 cup heavy cream
  • 4 cloves roasted garlic
  • 1 cup white cheddar cheese
  • 1 pepper chipotle peppers in adobo sauce
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 1 tablespoon parsley (optional, for garnish)

Directions

Step 1

Peel the russet potatoes and cut them into 2-inch chunks. Place them in a large pot and cover with cold water.

Step 2

Add 2 teaspoons of salt to the pot and bring the water to a boil over medium-high heat. Reduce heat to medium and let the potatoes cook for about 15-20 minutes, or until fork-tender.

Step 3

While the potatoes cook, roast the garlic by wrapping peeled garlic cloves in foil with a drizzle of olive oil. Roast in an oven or toaster oven at 375°F (190°C) for 10-15 minutes, or until soft and golden.

Step 4

Finely chop the chipotle pepper and set aside. If you prefer a milder flavor, use only half the pepper.

Step 5

Drain the cooked potatoes and return them to the pot. Allow the residual heat to evaporate any excess water for about 1 minute.

Step 6

Add the unsalted butter, whole milk, and heavy cream to the potatoes. Mash with a potato masher until smooth and creamy.

Step 7

Mix in the roasted garlic, shredded white cheddar cheese, and chopped chipotle pepper. Stir until the cheese is melted and fully incorporated.

Step 8

Season the mashed potatoes with smoked paprika and black pepper to taste. Adjust the salt if necessary.

Step 9

Transfer the mashed potatoes to a serving dish and garnish with chopped parsley, if desired.

Step 10

Serve hot and enjoy the bold, smoky, and cheesy flavors!
