Ingredients

  • 2 pounds Russet potatoes
  • 1 whole bulb Garlic
  • 4 tablespoons Unsalted butter
  • 0.5 cup Heavy cream
  • 0.25 cup Milk
  • 1 tablespoon White vinegar
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Olive oil
  • 2 tablespoons Parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the top off the garlic bulb to expose the cloves slightly. Drizzle with olive oil and wrap in aluminum foil. Roast in the oven for 30 minutes or until soft and caramelized.

Step 3

While the garlic is roasting, peel the potatoes and cut them into evenly sized chunks for even cooking.

Step 4

Place the potato chunks in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.

Step 5

Bring the pot to a boil over medium-high heat, then reduce the heat to a simmer. Cook for about 15-20 minutes or until the potatoes are fork-tender.

Step 6

Push the roasted garlic cloves out of their skins and mash them with a fork to form a garlic paste.

Step 7

Drain the cooked potatoes and return them to the pot. This allows excess moisture to evaporate.

Step 8

Melt the butter in a small saucepan over low heat, then stir in the heavy cream and milk until warmed through. Turn off the heat.

Step 9

Using a potato masher or ricer, mash the potatoes until smooth. Slowly incorporate the garlic paste, butter mixture, and white vinegar.

Step 10

Fold the ingredients together gently, ensuring a creamy consistency. Season with the remaining 0.5 teaspoon of salt and black pepper. Taste and adjust seasoning as needed.

Step 11

Transfer the mashed potatoes to a serving dish and garnish with chopped parsley if desired.

Step 12

Serve warm and enjoy your Garlic Vinegar Mashed Potatoes as a flavorful side dish!
